Berbere is an Ethiopian spice blend of three different chili peppers plus ginger, cardamom, fenugreek, allspice, adjwain (an Indian spice similar to thyme), cassia buds, and black pepper. When you grind it up it’s bright red in color, a little hot, a little sweet.
The cheesemakers at Zingerman’s Creamery have taken their delicate, hand-ladled fresh goat’s milk cheese called the City Goat and coated it in a layer of Berbere. It’s bright and tangy, balanced with a rich spiciness and a gentle heat that builds over time. Striking and delicious on a cheese tray, or try it spread on crackers or a burger.
