Fifth-generation operation Valserena is the oldest dairy in Parma, Italy. They use milk exclusively from their own herd of rare Sola Bruna cows to make Parmigiano Reggiano and this farmstead butter.
The cream is lightly cultured like yogurt or cheese, which gives the butter more complex flavors. And the texture? Unreal. Ethereal and silky smooth, almost like it’s whipped, and not at all greasy.
