Smoking Goose Fennel Sausages

We’ve been working with the meat maestros at Smoking Goose for years, and their humanely-raised bacon and salami are mainstays in my fridge. Now I have a new favorite that has been livening up my quick weeknight meals: the Wild Fennel Sausage. Pork sausage ground with wild Calabrian fennel seeds from Italy plus anise seed, sage, crushed chilies, and a splash of red wine. The fennel is amazingly aromatic and herbal, while the chilies add a heat that builds bite after bite. Fully cooked and ready to roll, these links shine with a quick sear. Serve them whole on crusty rolls with melty provolone and roasted red peppers or slice them up to top pizzas, pastas, beans, or polenta.
