The four huge, bone-in pork chops are from pasture raised, heritage breed Red Wattle pigs, with huge, rich flavor. The grits are an heirloom varietal called Jimmy Red, stone ground to keep their deep, intense flavor whole. And the cheese is our own Nor’Easter cheddar, made by Cabot in Vermont and selected just for Zingerman’s for hearty, balanced flavors.
