Dark Chocolate Honeycomb Candy

Honeycomb candy has been my absolute favorite confection since I was a kid, except we called it sea foam. Some call it sponge toffee or, in New Zealand, hokey pokey. You might call it something else too, but a confection by any other name would still taste as sweet—and as crunchy, airy, chocolatey, and fun.

This sublime edition comes from the craft chocolatiers at NeoCocoa. They set a mix of honey and sugar to boil then cool it quickly, trapping crunchy caramelized bubbles inside. They cover the broken up pieces in 72% dark chocolate making bite-size treats you won’t wanna share. At least I didn’t.
