Bixby Needhams Coconut & Potato Chocolate Candies

Needhams have been a Mainer favorite since the late 1800s, when locals found a genius way to put their potato bounty to sweet use. Some say it was smart marketing, others call it culinary magic, but either way it’s time the other 49 states got in on it. Creamy mashed potato is mixed with shredded coconut, then dunked in rich dark chocolate. The potato doesn’t add any flavor, only creaminess to the perfect sweet chocolate-coconut treat.
