Zambian Summer Harvest Honey

Summertime and the livin' is tasty.

The nearly tropical climate of the landlocked Republic of Zambia keeps the country warm all the time. The summer season (November to April) is the wettest time of the year and it feeds the forests and woodlands and grasslands of the country before the drier 'winter’ season. This particular harvest of honey happens during the wet season when the bees feast on the variety of nectars from the herbs and grasses and flowers exploding around the virgin Miombo forests in the center of the country.

Amber in color, the flavor has hints of anise and fennel, with one or two bitter notes that give way to a floral flavor and character. A perfect companion to cheeses and wherever you want to add depth and character along with the honey sweetness.

You may notice small particles suspended in your honey, this is residue from pollen that is left over after the filtering process. Mama Buci uses a wide filter that allows pollen particles to flow through. They are perfectly natural and don't detract from the taste!
