Michiganders enjoy whitefish when we head “up north” for a lakeside vacation. Everyone has their favorite. I’ve been a longtime fan of this pâté from Natural Northern Foods in Traverse City, so I contacted the maker, Lori LaClair, to see if she could tweak her recipe to match my memory of the spreads I loved growing up. Lori came up with this version we both think highlights the flavor of the fish and the art of the smoke without losing one note of nostalgia. You can only find this recipe at Zingerman’s Mail Order (Lori is keeping her local version the same since it has so many fans up there).
Smooth, creamy, slightly smoky and a perfect memory match. Serve with crackers, some fresh (or dried) cherries, and a crisp glass of cool wine.
