Tuscan Heirloom Tomato Soup

Over the last seven years (or so), the folks behind this blissfully delicious Tuscan tomato soup have been working here in Michigan to resurrect worn out fields and turn them into rich, nutrient laden land thanks to regenerative farming practices that help the soil survive, thrive, and grow delicious fruits and vegetables. The idea is to focus on the health of the soil and everything else should fall into place like retaining more water, using ground cover crops to minimize erosion, and rotating diverse crops through the land instead of growing the same thing in the same place year after year. 

Through these farming methods the folks at Tomato Bliss grow and harvest unique and delicious varieties of tomatoes, many of which end up in this straightforward, warming soup. It's made from ingredients you'd use at home, including heirloom tomatoes, roasted onions, olive oil, balsamic vinegar, garlic, and just a touch of basil to bring it all together. 

Reheat on the stove or microwave. It's delicious as is, but I love it with an extra splash of cream to add richness. Serve with grilled cheese for nostalgia reasons. Sip, soothe, recuperate, repeat.
