This extra virgin olive oil made exclusively from Frantoio olives grown in the town of Vernalis, California is the perfect example: bold, bitter, herbaceous with a thick, luxurious texture on the tongue. The olives are harvested when most of the olives are still green on the trees. It cuts down on yield—greener olives are less ripe, so they have less oil. But the flavor is fresh and remarkable.
