Thai Green Curry Sauce

When I check out a new Thai restaurant, I always order the green curry on my first visit. After trying this take on the classic sauce from Thaifusions, I’ll be preparing green curries at home frequently, too.

The sauce is bright with a creeping heat that’s spicy without overwhelming the complex flavor that dances between herbaceous Thai basil, citrusy lemongrass and Makrut lime, savory fish sauce and shallots, and a hint of sweetness from a touch of sugar.

Simmer meat, tofu, or veggies for 20 minutes on the stovetop, and serve with rice for a quick, seriously flavorful meal.
