Loukanika Salami

Ryan Wagner founded Driftless Provisions in the Driftless region of southwestern Wisconsin as a way to better connect people to their local land, farmers, and animals. He and his team craft salami from wild game and heritage Berkshire hogs raised humanely without hormones or antibiotics on nearby farms.

The Loukanika (pronounced loo-KAH-nick-ah) is a Greek recipe. The pork is seasoned with garlic, cumin and orange zest. It’s wild, complex with a strong flavor of cumin tempered with the bitter citrus notes from the orange rind. Unexpected and delicious, it's especially great with goat cheese or a glass of Pinot Noir.
