KM 39 Cheese from Spain

Aged cheese from northwest Spain.

In rural Galicia in northwest Spain, it’s common to find young, soft cow’s milk cheeses, but KM39 takes a different path.

Named for the nearby kilometer marker along the Camino de Santiago pilgrim walking route, KM39 is made with local pasture-fed Rubia Gallega cow’s milk from farms within 30 kilometers. Aged for 18 months, this hard cheese is often compared to Parmesan, but that barely scratches the surface. It’s intensely complex: bright tropical pineapple notes up front, rich brown butter and caramel in the middle, and a nutty walnut finish. And did I mention the delightful crunchy crystals?

Enjoy it as is, pair it with Marcona almonds, drizzle it with honey, or shave over creamy pastas.
