Hafod Cheese

A rare farmhouse cheddar from Wales.

Hafod is an organic, raw-milk cheddar made to an ancient Welsh recipe by Sam and Rachel Holden on their farm Bwlchwernen Fawr. (Don’t you just love Welsh names?)
 
They raise and milk sixty-five Ayrshire cows on their farm for the cheese. The milk from Ayrshire cows is very rich and high in butterfat and protein. That's exactly what you want out of the milk you're using for cheesemaking and the result is a fantastic cheddar made in Wales.
 
Creamy, buttery, bright yet rich, it’s a fantastic cheddar from one of the few farmhouse cheese makers in the United Kingdom.
 
The wheel we're cutting into currently was made in February 2016. It's filled with springy notes, like asparagus and a fresh grassy field.
