Spiced Plum Preserves

The teams at Blake Hill and Jasper Hill Farm, maker of one of my all time favorite blue cheeses (Bayley Hazen), worked together on the recipe for this preserve. The Blake Hill jam makers take fresh plums and simmer them with raisins, a tawny port, and a bit of spice to create a perfect pairing for any rambunctious blue or intensely flavored cheese. Just a dollop adds complexity and balance. It tames the piquant, prickly nature of most blue cheeses with its soft, spicy, sweetness. Amazing.

But don't let its origin keep you from trying it slathered on toast or biscuits or brioche.
