Pinot Rose Ubriaco Cheese from Italy

Romantic rosé cheese.

“Ubriaco” means “drunk” in Italian, and in this case refers to cheeses soaked in alcohol like wine and beer. Importantly, for cheesemaker Sergio Moro and his family, the alcohol is not meant to mask the flavor of the cheese. Instead, Sergio selects cheese from local cheesemakers in Veneto that will work hand-in-hand with the wine to enhance the natural flavor of the cheese, not overpower it.

This 8 month-aged cow’s milk cheese is soaked in organic Italian sparkling rosé for up to two months. The result is bright, fruity, and lightly floral without any harsh alcohol bite. The rind, topped with dried rose petals, adds to the romance. Naturally, it pairs beautifully with sparkling wines and rosés.
