Rodger's favorite new food of 2021.

Rodger is a co-managing partner and head chef at Zingerman's Delicatessen.

I love our classic knish. Always have. It’s a Jewish pastry stuffed with savory filling—in this case, fluffy potatoes—wrapped in flaky, buttery dough. It fits perfectly into your hand so you can eat it on the go, just like they did in Jewish neighborhoods like NYC in the early 1900s.

We’ve been making them at Zingerman’s Deli since we opened our doors in 1982 and the only thing we’ve changed is to improve a few of the ingredients, like using mashed Yukon Gold potatoes and fresh farm cheese from Zingerman’s Creamery.

You can eat them cold, but I like mine served hot with a side of good mustard. Fall 2021 marked the first time we’ve shipped our knishes nationwide, so that lets me dub this Zingerman’s classic as “new.”
