Made by Jasper Hill Farm in Vermont, these small wheels of pasteurized cow's milk are wrapped with the inner bark of spruce trees. It holds the cheese together as it ages and imparts a woody, slightly piney flavor to the spoonable cheese inside. The cheese is sweet, with bright citrusy notes and a luscious texture.
Keep the bark around the wheel, scoop the cheese out from inside, spread it on something warm and crusty, eat, sit back and let your eyes roll into the back of your head. It's that kind of an eating experience, an unforgettable introduction to how incredible soft-ripened cheeses can be.
