At Zingerman’s, we have our own Charlie, and, yes, he has a small chocolate factory. Charlie Frank is his name. His Zzang!® chocolate factory is a small, clean, white room with a minimal number of machines — two, at last count: one to mix and one to dress the candy in chocolate, appropriately called an "enrober."
Charlie makes great, old-fashioned American candy bars almost entirely by hand. Chunky, fat, fudgy bars you can wrap your hand around. They're not the serious kind of sweet you nibble with your eyes closed, hushed, your tasting notes near at hand. They're the kind where you chew great chunks off, when you've just finished your banjo lesson and want to whoop and holler. This is fun, fantastic candy, made all natural without cutting a single corner.

Some folks say this is what a Snickers would taste like — if it were made by hand with great ingredients. Charlie starts with honey nougat made with natural peanut butter. He rolls it up in a sensual caramel made from organic muscovado brown sugar. The biggest and best Virginia peanuts we can find come next, and the whole endeavor's finished off with a hand dip into a rich bath of 64% dark Ecuadorian chocolate.

I suppose this would also be an appropriate bar for anyone with a career in finance or real estate. Cashew butter, roasted cashews, our own cashew brittle and a bit of puffed rice, milk chocolate and just a smidge of sea salt. All dipped in a very delicious dark chocolate.
Kids Favorite: What the Fudge?
If you turned a hunk of fudge into a candy bar, this is what you'd get. A very sweet mix of dark and milk chocolate with organic muscavado brown sugar, milk, heavy cream, real butter and vanilla and malted milk powder.
