Giorgio Cravero's family has been aging Parmigiano Reggiano in Bra, Italy since 1852. He focuses on soft, sweet flavors, the kind of Parmesan you want to eat, not grate. The cheese we buy comes exclusively from the San Pietro dairy, located high in the hills above Modena, so high it's one of only a handful of Parmesans granted the designation Prodotto di Montagna, which recognizes the fantastic effect that mountain pastures have on the flavor of the cheese.
For the cheese lover on your gift list, we've hand cut a huge two-pound wedge from one of Giorgio's exquisite eighty pound wheels and put it in a muslin bag along with one of his company's seals and a bonus classic parm knife—the kind Italians use to whittle and wedge off irregular chips of parmesan. They nibble after dinner, they nibble as a snack, they nibble whenever they'd like. The cheese lover you choose will do the same. Very limited quantities.
