This complex curry simmer sauce from Kitchens of Africa—our source for Maffé
sauces—is named for the “Spice Island of Africa.” Fittingly, it’s made from a blend of spices like cloves, paprika, chiles, star anise and others mixed with coconut milk, ginger, garlic, spinach, and even peanuts. For as many spices as this sauce has, it's not overly spicy—which is to say, not too hot. The flavors all blend and balance, making for a supremely flavorful sauce.
Cook some veggies or a protein—I’m partial to chicken, but lamb or even chickpeas are also great—then simmer it in the pan with a jar of Zanzibar and a little water or coconut milk. Serve over rice
