Tomato Sauce with Mazara Shrimp

Mazara del Vallo is one of Sicily’s most famous shrimp fishing ports and the red prawn (rosso di mazara) is the shellfish they celebrate. This sauce, made by Villa Reale in Sicily, combines the flavors of the sea with the bounty of the farm better than any other I’ve tasted in recent memory.

It has a classic, chunky tomato sauce texture with big bits of zucchini and shrimp throughout. The flavor is bright with acidic notes from the tomatoes and the brininess of the shrimp.

Easy, simple to toss with pasta, and loaded with seaside flavor.
