Maui Lavender Ponzu

Most of the island of Maui is made up of the dormant volcano Haleakala, or “House of the Sun.” Along the southwestern slopes, nine varieties of lavender thrive in the Mediterranean-like climate on the Ali’i Kula Lavender Farm.

Back on the mainland, the team at Poi Dog in Philadelphia uses this exceptional lavender in their Hawaiian-influenced take on ponzu, a citrus-based sauce that’s similar to soy sauce but with a lighter texture and a more delicate flavor. The fragrant, herbal lavender balances the sharp tartness from lime and yuzu juices and the salty, savory qualities of soy sauce and a bit of dried bonito tuna to create a floral, zesty sauce. 

It’s fantastic as a dip for dumplings and sushi, or whisked into a dressing for sesame noodles or salads.
