Mucky Duck O.G. Pub Mustard
Slightly sweet, somewhat tangy, just a bit spicy.
Back in 1994 we used a Michigan-made mustard on some of our sandwiches called Mucky Duck. I’d never tasted anything like it before: sweet, tangy without being sharp, and—it’s too much to say it had a ‘kick’—it hinted at being spicy without being spicy. This was before the sweet/hot honey mustards started taking over deli counters across the country.
We stuck with our local hero until poof! It was gone. “Mucky Duck Mustard” went from being legendary to just a legend. Did we dream it up? Was it really that delicious and unique? Eventually, old-timers like myself moved on to other adventures and a new generation took over without so much as a notion of what once was.
And then the duck came back. They sent a sample to us to try, but I was the only one who remembered it. Sweet? Check. Tangy, but not sharp? Check. Just a hint of heat without actually being hot? You know it. And you better believe that my sandwiches are so much the better for it.
