APOS Olive Oil from Greece

Most of the time when we’re talking about olive oil we celebrate the big, bold, peppery, and grassy side of the flavor spectrum—so this delicate beauty from the far northeastern corner of Greece is something of note. First, its flavor is unlike any other olive oil on our shelves: it starts out soft, then a little fruity and floral, before giving way to buttery smooth notes that roll right into a slightly peppery (but not bitter) and assertive finish. I have to think hard to remember tasting an olive oil as complex and multi-faceted in its flavor, yet so approachable and downright fun it is to use.
