Among La Quercia’s outstanding ham offerings, this is their old growth Bordeaux. Like the wine, Its flavor is complex, structured, intense and seems to stay on your tongue forever.

It’s what I call the longest experience of all their hams and by that I mean it really covers a lot of ground—or taste—in your mouth. The first thing you notice is its texture: smooth, soft, nearly creamy on the tongue. Then the flavor begins: meaty, maybe even a bit wild and gamey, though not off-putting. A term I’ve heard a lot and agree with is “porky.” All that intensity softens in the finish and the texture returns to your mind. It’s luscious, not heavy or oily.

From Eden Farms, a coalition of family farms in Iowa, Missouri and Illinois that raise 100% pure bred Berkshire hogs humanely, without hormones or sub-therapeutic antibiotics. The hams are unsmoked. They're aged 12-14 months, depending on the size.

To slice, use a sharp knife and work the ham lengthwise. Don’t worry about getting big slices—focus on keeping the pieces thin, and make sure your bite has a little bit of meat and fat. No cooking necessary - the ham is best served as is, like you would prosciutto.
