It’s what I call the longest experience of all their hams and by that I mean it really covers a lot of ground—or taste—in your mouth. The first thing you notice is its texture: smooth, soft, nearly creamy on the tongue. Then the flavor begins: meaty, maybe even a bit wild and gamey, though not off-putting. A term I’ve heard a lot and agree with is “porky.” All that intensity softens in the finish and the texture returns to your mind. It’s luscious, not heavy or oily.

To slice, use a sharp knife and work the ham lengthwise. Don’t worry about getting big slices—focus on keeping the pieces thin, and make sure your bite has a little bit of meat and fat. No cooking necessary - the ham is best served as is, like you would prosciutto.
