Red Bear Provisions has quickly become one of our favorite salami makers, Working just outside Chicago, Illinois, salami maker Inessa Lysenko and her team use premium cuts of humanely-raised meats to create their salamis.
This Italian-inspired classic is no exception. Made and named for its intended consumer—cacciatori (Italian for huntsmen)—each salami, made with heritage-breed pork, wine, sea salt and a smidge of spice, packs a big flavor: salty, rich, unctuous, it’s intense and very porky.
