Beyond the fad.

Bacon jam was a fad for years. We’d receive samples of someone’s unique idea to turn bacon into a spreadable ‘jam’ from all corners of the country. After some early hype, these jams faded into obscurity and the idea seemed destined for the dustbin.

Then Heather and Brad Sanford from The Piggery in Ithaca, New York, got into the game. Their jam, made with their own heritage-breed pasture-raised pork, is everything those other makers were hoping to be, but never quite achieved: a bacon spread made from great ingredients that tasted great. Of course it has deep, smoky, savory bacon flavor, but that's balanced with brighter notes, like the sweetness of caramelized onion.
