Though “pain d’épices” translates from French literally as “spice bread,” it’s more commonly called “honey cake” in English. The name is fitting. This loaf-shaped cake, made in Burgundy in the heart of France’s honey cake homeland, is sweetened with a generous dose of honey, which balances beautifully with the tangy rye-based cake. Lightly spiced with ginger, cinnamon, cloves, cardamom, and more, the cake is floral. It's topped with a sugar crumble.

Unlike a powerhouse American gingerbread, this French take is much more subtle, allowing the honey to shine. Perfect to nibble alongside tea or as a lighter dessert option.
