It's made from Grafton's one year aged cheddar that's cold-smoked over maple chips for a few hours. The smokiness complements the savory tang of the cheddar. It's subtle, not overpowering, and it gives the cheese a wonderful aroma. Simple to eat and popular with everyone that tastes it.
