Ibérico pigs are a heritage breed that roam free in the oak forests in southern Spain—and now, also on the wide open pastures of southern Georgia. Will Harris and his team at the renowned White Oak Pastures in Bluffton, GA, are raising Spain’s most prized pigs.
 
The Ibérico breed has an incredible richness of flavor that’s so savory it almost seems like a cross between pork and beef. Will’s Ibérico bacon has a melt-in-your-mouth quality from the creamy fat, and a succulence from just a whisper of pepper crusted on the outside that keeps folks going back for more.
 
If I serve more than one bacon at a big brunch bash, this one is guaranteed to disappear first. Will’s supply is limited, so ours is, too. Get yours quick.
