Virtual Event: Behind the Scenes with La Quercia's Master Meat Curers

March 20, 2021: Behind the scenes with Herb and Kathy Eckhouse of La Quercia.

Herb and Kathy Eckhouse make some of the world’s best prosciutto, but they don’t make them in Italy. Located just outside of Des Moines, Iowa in the heart of pig country, Herb and Kathy have taken their company, La Quercia, from a basement project into one of the country’s high houses of cured ham. Now They’re going to share their labor of love with us! 
 
Herb and Kathy will join us from their home in Iowa and guide us through a tasting of three of their cured meats: two prosciutti and one salami. They’ll be teaching us about the different varietals of pork they work with, why, and what the means for the flavor of the finished prosciutto or salami. 
 
Herb and Kathy will share videos showing an insider sneak peek into their ham curing operations, the people that do much of the work, and most importantly the pigs! If you’ve ever wondered what rural Iowa looks like in spring and wanted to savor charcuterie from true artists of the medium, then this is your chance. 
 
We’ll lay out a whole spread: in addition to the meats, we'll be tasting cheese, bread and more, each item chosen specially to pair with the prosciutto. Find yourself a bottle of crisp, bubbly, soft white wine to accompany the tasting and you’re all set!
 
  
Logistics
The class will start at 3 pm ET on Saturday, March 20th and last for about an hour.
We’ll ship the meats and other foods before the event. You'll receive them by Thursday, March 18. Try to not cook them all before the class!
The class will take place over Zoom. You'll need a device to connect to Zoom and a high speed internet connection to attend. We'll include instructions getting connected to Zoom in the box (and we’ll email the instructions, too).
The event is hosted by Zingerman’s.
 
What food is included in your shipment
Two different kinds of prosciutto and one salami from La Quercia, plus bread, cheese, nuts, and dried fruit to pair with them. All told, there will be enough food for a tasting with four people (or for one person to have leftovers after the event).
