Providence was styled after Italy’s famous
Taleggio cheese, but with a few significant differences. For starters, unlike the Italian original, which is made with cow's milk, the folks at Goat Lady Dairy use the milk from their own herd of goats. And while Italian Taleggio tends to be on the softer side, Providence is well aged until it's more akin to the texture of a firm manchego or pecorino.
The flavor of Providence is bright, with citrus notes and a yogurty finish. Grate over pasta or dishes that might usually feature
Parmigiano Reggiano, or enjoy on a cheese plate with
good bread, some
nuts and an apple or two.
