The older I get, the more it seems I appreciate spicy foods. Stubbornly, I used to believe that spicy sauces were there to mask otherwise bland dishes and give them some flavor. Now I realize a spicy sauce can augment, highlight, and heighten the flavors of your cuisine, making them even more flavorful than before.
But this sauce doesn’t just support, it brings its own fun to the table in the form of a fruity type of heat. It's made in Peru with yellow (AKA amarillo in Spanish) chiles blended with oranges, mangoes and touch of garlic. Spicy, yes. Hot, sure. Overpowering? Never.
