Though all Parmigiano Reggiano is made according to a strict set of guidelines, there’s a world of difference between the cheeses from the 335 cheesemakers. You don’t have to be a master taster to notice the variations, either.

Each month, taste the differences between cheeses of different ages, cheeses from different locations, cheeses made with different milk sources. You’ll get two chunks of Parmigiano Reggiano each month, always totaling over a pound total, along with information about the two different cheeses. The first month’s shipment also comes with a cheese grater, for getting the cheese ready for pasta, salads, or just nibbling.

As proof, they have cheeses imported from some of the more than 300 producers in that Italian region, to show contrasts in taste and texture according to the producer and age...
