Michigan Dried Beans

Pantry staple.

On one lucky tour of Italy I had the chance to enjoy beans in their simplest, most flavorful form. They simmered in a ceramic crock next to an open fire for hours until they were presented with a heavy dollop of olive oil and sea salt. They were amazing. I've never been able to recreate the dish until I found these dried beans from the Carlson-Arbogast Farm in Howard City, Michigan, about half an hour north of Grand Rapids.

You see, for all of my cooking career I've shied away from dried beans, lentils, and the like. "Too much work!" I'd tell myself. "Who has time to soak things overnight?"

Well, recently I've had some extra time on my hands (like most people). Turns out, not only are dried beans easy to use and even easier to cook, but they taste incredible. 

Soups, salads, and even side dishes zing with these beans. Pick your flavor and go from there.

Lentils - tried and true. High in protein, healthy and delicious with earthy, woodsy flavors.
