Ibérico pigs are a heritage breed that roam free in the oak forests in southern Spain—and now, also on the wide open pastures of southern Georgia. 3rd generation pig farmers Jaime and Kurt Oriol from southwestern Spain have partnered with 5th generation rancher Will Harris and his team at the renowned White Oak Pastures in Bluffton, GA, to raise Spain’s most prized pigs here in the US.
 
The Ibérico breed has an incredible richness of flavor that’s so savory it almost seems like a cross between pork and beef. Kurt’s Ibérico bacon has a melt-in-your-mouth quality from the creamy fat, and a succulence from just a whisper of pepper crusted on the outside that keeps folks going back for more.
 
If I serve more than one bacon at a big brunch bash, this one is guaranteed to disappear first. Kurt’s supply is limited, so ours is, too. Get yours quick.
