Perfect vanilla for baking and making pies.

About ten years ago a dairy farmer by the name of John Ross traveled to the island of Tonga for vacation. Though he’s from New Zealand, a rather beautiful place in its own right, he fell in love with the people and island.
 
He quickly made friends with families in a small village. After his visit, the island was ravaged by a terrible cyclone, practically decimating villages all over the island. John returned to his new love and helped the folks living in the village of Vava'u rebuild their homes. As a special thank you, the elders of the village agreed to lease him some overgrown land the village owned to do with what he may.
 
After a bit of research, John decided that it would be the perfect environment to grow vanilla, a cash crop that would fetch a very nice price for the people of the village.
 
John traveled to Tahiti, Madagascar and any other exotic locale he could find to learn about how to grow vanilla (sounds like a hard bit of research!). He decided to grow Bourbon vanilla beans—the variety they grow on Madagascar and the most popular vanilla for culinary uses.
 
With this paste, you get the full flavor and appearance of vanilla seeds without the hassle of splitting and scraping the beans. Very little sugar is added to the paste (other producers add roughly 45% sugar to their concoctions while Heilala only adds around 5%).
 
Since it’s the season for pies, this paste is very convenient. Use it in any recipe that calls for vanilla beans or even extract. You really can taste the difference.
