Coppinger Cheese from Sequatchie Cove Creamery

Appalachian beauty.

Sequatchie Cove Creamery lays at the foot of the Cumberland Plateau in eastern Tennessee, nestled amidst the lush, smoky greenery of the Appalachian mountains.

Made from raw cow’s milk and aged for 90 days, their Coppinger cheese has a soft, creamy texture. There’s a layer of vegetable ash in the middle, which is smooth and savory and buttery. The flavor has some nice grassy notes as well and the smallest lemon zip in the finish.
