Chocolat Moderne Caramel Sauces

Joan Coukos started her company Chocolat Moderne in New York City more than a decade ago. Originally a banker, she turned her passion for making sweets into one of the country's most unique confection companies. In her short time in business, she's earned accolades from Oprah, the Food Network, and the Cooking Channel just to name a few.


To make these sauces, Joan starts with her rich, buttery, woozy, perfectly drizzle-able caramel and flavors it in two different ways. First, the Passion Fruit Caramel has a bright, pineappley type of sweetness from loads of passion fruit that’s complemented by a dose of cardamom. Next, the Blood Orange Caramel is perfectly balanced between the rich depth of the caramel and the bright burst of citrus, with an added boost from a bit of bergamot.


I've been using these a lot in the morning. Lately I've been throwing together crepes and filling them with sliced bananas, a bit of almond butter, and a healthy dollop of one of these caramels. They're also great over ice cream or swirled into yogurt. Use them as a dip for apple slices, or drizzle over poundcake. Both are also great straight from the jar served on a silver spoon.
