Geothermal salt.

The icy waters of the north Atlantic fill Iceland’s Westfjords with pristine sea water ready to be turned into sea salt. In warmer climates like the coast of southern Portugal, the sun does the work of evaporating water and leaving salt behind. In Iceland they use geothermal heat from the lava flowing underneath their feet to boil sea water. The water evaporates, leaving white, flaky, crunchy crystals of mineral-flavored sea salt. They drive even more moisture from the flakes by drying it on trays over birch wood smoke, which imparts a woodsy, smoky character.
 
Big hit with cooks of all stripes, especially to finish dishes. Try it sprinkled over steaks, roasted vegetables, or grilled fish.
