Birch-Smoked Bukovo Chili Flakes from Greece

The farmers in Almopia, a municipality in northern Greece that borders North Macedonia, grow a special variety of chili pepper called Bukovo, which gets its name from the Slavic word for “spicy.” The oblong, ruby red peppers ripen in September. They’re sun dried and slow smoked over birch wood for 10 days, during which time the farmers keep vigil 24/7 making sure the fire never dies out or burns too strongly. Finally the peppers are ground into a flakes that are subtly smoky, rich with an earthy sweetness and just enough heat to provide a kick without being overwhelming.

Sprinkle them on your pasta or pizza, whisk them into soups or sauces, jazz up soft cheeses or roast meats.
