The Trentino-Alto Adige region of northeastern Italy is an incredibly diverse area, with cuisine rooted as much in Austria as in Italy. In fact it was part of the Austria-Hungary Empire until just the last century and today many of its residents speak German, not Italian. The food of the region, like its people, is heavily influenced by both countries, and this vinegar is a perfect example.
