The PX in this vinegar is shorthand for Pedro Ximenez. That's the type of grape used to make one of the more popular versions of sherry in Spain. It's an earthy, deep, complex grape that produces sherry on the sweeter side of things (sherry has a wide spectrum of flavors, just like any wine).
 
But this is vinegar, and a good one at that, which means they first had to make a good sherry (can't make good vinegar from bad wine) and then let it convert over into vinegar. Like balsamic vinegar, it has deep, caramelly notes that give every dish it touches complexity and long, lingering flavors.
 
This is the perfect time of year to enjoy this type of vinegar, and I'm thinking caprese salads or anything featuring fresh tomatoes. It's also great cucumbers and even drizzled over strawberries. Use this to glaze grilled meats, make a vinaigrette, or as garnish with gazpacho. The summer sky is the limit with this incredibly useful vinegar.
