What kind of magic is going on here I do not know. As a lifelong fan of homemade stovetop popcorn I’ve usually resisted attempts to put sugar in my salted treasure. Popcorn has salt, butter, maybe cheese, full stop. This popcorn converted me.
Maybe it’s the brown sugar. Maybe it’s the extra helping of pink sea salt. Maybe the vanilla powder, a surprise ingredient that performs a host of culinary tricks, contributing a flower-and-smoke aroma and a mild pepperiness.
Frankly, I don’t care to overanalyze it. Suffice it to say it’s got a sweet-and-savory balance that’s rare to find in caramel corn, and a must-have-another-handful that makes it a go-to snack.
