Shrimp and Pistachio Pesto

Scent of the sea sauce.

The first thing you smell when you open the jar is the sea: briny, fishy, clean. 

Made by Villa Reale in Sicily, this sauce turns ordinary pasta night into an Italian seaside dining experience with minimal effort. The flavor can be dominant, though, so you don't have to use the whole jar. A few tablespoons mixed with olive oil (for a thinner sauce) or with plain tomato sauce will give it enough punch to get the flavor across.

Thick and velvety smooth, this pesto is made from cooked and chopped Mediterranean shrimp, famous chopped Sicilian pistachios, a bit of onion and olive oil. You smell and taste the shrimp at first, then the flavors move from savory to sweet and nutty. Finally, it ends with rich umami flavors and briny notes of the sea.

A love of seafood and the briny flavors of the ocean is a must when selecting this sauce. If you don't love seafood, that's okay. You should give this sauce a shot and broaden your horizons.
