Passion Fruit Caramel Sauce

Disclaimer: I don't usually tend towards sweets. I'm more of a savory type of fellow, so when I come across a confection like this caramel that I keep thinking about long after I've tasted it, I know it's a winner. 
 
Joan Coukos started her company Chocolat Moderne in New York City more than a decade ago. Originally a banker, she turned her passion for making sweets into one of the country's most unique confection companies. In her short time in business, she's earned accolades from Oprah, the Food Network, and the Cooking Channel just to name a few.
 
This passion fruit caramel might be my favorite thing she makes. It has an exotic, pineappley type of sweetness from loads of passionfruit that's complemented by the addition of cardamom. It's smooth, rich, buttery and generally just an awesome caramel. 
 
I've been using it a lot in the morning. Lately I've been throwing together crepes and filling them with sliced bananas, a bit of almond butter, and a healthy dollop of this caramel. It's also great over ice cream or swirled into yogurt. It's bright flavor and mouthwatering texture make it my caramel pick of the last decade and my favorite confection of the year.
