Mojo picon is a speciality of the Canary Islands of Spain which sit in the ocean about fifty miles or so from Morocco. The Spanish influence mixed with that of northern Africa make their cuisine something of a mash up of cultures and tastes.
Made from olive oil, Spain's famous marcona almonds, harissa, garlic, coriander, caraway, cumin, paprika, oregano and salt, mojo picon is a veritable garden of herbs and spices in a jar.
It's wonderful on seafood. I personally like it with grilled shrimp. Great with scrambled eggs or even spilled over manchego or another flavorful Spanish cheese. Also very good as a secret ingredient in sauces or spreads when you're looking to kick up the spice level and add a bit more heat to your dish.
