Pickle mustard.

Ever since Shamus Jones started his company, Brooklyn Brine, in 2009, he's been one of the more notable and popular pickle makers in Brooklyn...which by extension makes him one of the more popular pickle producers in the country since Brooklyn has been considered the front lines of new artisan foods in the country over the last ten years. I don't know why. My guess used to be the rent was cheap in Brooklyn, but those days are long gone so maybe there's something in the water.
 
True to their pickle roots, this mustard that starts with pickles—or rather, the brine from their Maple Bourbon Bread & Butter pickles. (The bourbon is from Finger Lakes Distilling and the maple syrup is organic, more deeply flavorful grade B stuff from upstate New York.) The brine from the pickles is mixed with ground mustard seed and cider vinegar to create a mustard that's both sweet, earthy, heady, and all the way delicious.
 
Try a dollop with a liverwurst sandwich. Epic.
