Robert Lambert's lemon love.

To many, myself included, Robert Lambert is in the top tier of artisan preserve makers. Even at the age of seventy, Robert does everything himself with very little help. He’s a perfectionist. Some might say he's a little obsessive, but one taste of anything he makes shows how worthwhile that diligence is. He picks his own fruit whenever possible, or sources it from local farmers he’s known for years. But it’s not just the meticulous way he sources his ingredients that makes the difference, it’s what he does with them once he’s in the kitchen.

His marmalades are especially exceptional, and this beauty made from fully ripened Lisbon lemons is my new favorite. As Robert explained, he "tried for years to make a Meyer Lemon marmalade, but it never matched my expectations."
 
Apparently it wasn't sour enough and the peel was too thin and turned white when cooked. Once he found a Lisbon lemon that he liked (his Rangpur lime grower had a few trees) he first turned the citrus into syrup before seeing how it worked for marmalade. Spoiler alert: it worked really well.
 
Made from whole lemons, lemon juice, cane sugar and a bit of water, it's the purest, most unadulterated marmalade of his line: straight forward lemon flavor with lovely bitter, sour, sweet notes you won't forget. Like a bit of summer in a jar.
